We use the FCK editor with mediawiki and it gives us some grief with image insertion. Future updates might fix this.  I personally like the simplicity of the wiki syntax but lots of people prefer the familiar wysiwyg.

On a side note: Would it make sense to use categories in addition to sub pages?  I started making some categories but it seems that pages and sub-pages work well.

I think it does make sense to use categories, it can be easier to maintain.

The subpages are pretty much just there because we imported them from Mindtouch.
